Simply Sweet Tomato Soup (Paleo, GAPS, SCD)


Happy Friday everyone! The weekend is basically here which, if you are anything like me, you are more than looking forward to. I have an amazing recipe to share with you today too that would be an easy addition to your weekend meal plan. This Simply Sweet Tomato Soup was made entirely with tomatoes from my parents garden when I was recently in BC. We had more tomatoes than we knew what to do with out there! It was glorious. There is nothing quite like a fresh tomato right out of the garden. Oh yum. So I hope that your garden is still spilling over with tomatoes because this soup is a great way to use them! This one is also incredibly easy to make, and pretty darn delicious if you ask me (Erik and my family would also support that statement). This recipe only has 6 ingredients, and is ready in under 20 minutes. Yep, I told you it was easy!

So I don't know where you live, but we just had an epic (yes epic) snow storm here this week. If you ask me it is way too early for snow and the destruction that we had here in Calgary was incredible. At my house we were without power for about 8 hours on Wednesday so I ended up hibernating in the library in order to get access to the internet (it's basically impossible to study without the internet it turns out). It is going to take weeks to clean up from this storm. And so many beautiful trees and crops were ruined. It's pretty sad actually. I have never seen anything like this in September in my life time, and I am not sure if there has ever been a storm like this this early in the season. But in true Calgary fashion, it is supposed to be back to summer type weather by the weekend. They say we are the city that can experience all four seasons all in one day, and this week is a prime example of how true this statement can be. 

Ok rant time. You know what needs to be stopped. This whole leggings as pants phenomenon. Now don't get me wrong, I am a huge fan of leggings - but - under tunics and tops that, ahem, cover those bits that are supposed to be covered. I am seeing more and more women wearing thin leggings instead of pants, and let's just say there is not a lot of imagination required to see what's underneath. Is this happening where you live? Why people why? Do they not realize you can see through these things? In which case should I say something to these women? It's the same debate I have in the bathroom when I see someone not wash their hands. Don't even get my started on how disgusting I think this is… and it's not as uncommon as you would think.  What do you think? Do you call people out on their social faux pas? Someone please weigh in!

Ingredients

6 cups baby tomatoes, washed and dried
1 can full fat coconut milk (I suggest this brand
2 TBSP grassfed ghee (buy here
1 TBSP dried organic basil (I use this kind
1/4 tsp sea salt (plus more if desired) 
1/8-1/4 tsp ground black pepper (depending on taste) 

Directions

1. Add baby tomatoes and coconut milk to your blender and blend until smooth
2. Transfer ingredients to a large pot on the stove and turn the burner to medium heat
3. Add remaining ingredients and allow the soup to come to a boil
4. Simmer for 5-10 minutes
5. Remove from heat, serve and enjoy!

  1. I'm with you on the leggings thing, Erin! And I must say, your soup photo is gorgeous! My daughter and I are going through the AIP elimination right now and this post really makes me miss a good home made tomato soup :( Anyway, I recently subscribed to your blog and was pleasantly surprised to realize that you live in Calgary...I'm in Cochrane and so happy to have someone local to connect with, whose food values are in line with mine :-) Looking forward to more of your great work!     1. Colleen it's so great to hear from you! I love finding other people nearby who have similar food beliefs (trust me I know we are few and far between). The AIP can be tough but stick with it! I have seen patients have amazing results with that diet alone. Thanks for the comments :)
