Slow Cooker Coconut Lime Shredded Beef (Paleo, Gluten Free, Beef)

Happy Tuesday! Did you have a good long weekend? I sure hope so!

I love long weekends. I really think that every week should have a 3 day weekend. In my future life, once I have control over my schedule, I really would only like to work 4 days a week. Doesn't that sound amazing? I would also like to live on a beach and win the lottery. Some of these dreams may be a little more realistic than others...
If I did only work 4 days a week just think of all that extra time I would have to spend on the blog! I could probably start posting twice a week. Crazy! Now I just need to make it through the next 2 years of my training and then I will be free to do as I please. That time can't come soon enough!

I wish I had some fun stories to tell you from my weekend. But as per usual it was spent studying. And cooking meals for the week. I am living such an exciting life right now I know. So I won't bore you with any more of the details.

In happier news... Valentines Day was on Friday. Did you do anything special? Or get any special gifts? To be honest I think that Valentine's Day is a total Hallmark holiday - a big scheme to get people to spend more money after the post-Christmas shopping lull... BUT, I also do like the idea of a day that celebrates your relationship. I just don't think you need to go spending crazy money to show someone that you love them. Erik got me flowers this year, and being the flower lover that I am this made me a pretty happy girl. Flowers, kitchen gadgets, chocolate and anything from Anthropologie. Those are the keys to this girl's heart.

In similar news, and totally un-paleo related, did you know that it is New York Fashion Week? One of my favourite times of year! Along with Christmas and summer time of course. Now normally I would be stalking style.com each day to see all the pretty clothes. But sadly, all this Royal College studying is taking away from my precious online clothing viewing. It's tragic! I will definitely be catching up come spring don't you worry. One day I would love to go to New York Fashion Week. Seriously, that would be a dream come true. It would just be so hard to pick only one designer to see! They are all so amazing. Bucket List dreams my friends. Bucket List dreams...

Ok moving right along to food. I can't believe I forgot to share this recipe with you! It has been sitting in the archives for a few months now collecting dust. And that's a shame because I really liked this one. And it is super easy. It is made in the slow cooker and so it only takes a few minutes of preparation and then you're done! I don't think I would have survived this year if it were not for my slow cooker. That may sound dramatic but when you are working 60-70 hours a week and studying 30-40 more hours, that doesn't leave a lot of time for food making. Or anything else for that matter. And considering that most slow cookers cost less than $40 that is money well spent if you ask me. If you haven't invested in one yet I highly suggest that you do. No real food kitchen is complete without a slow cooker in my opinion.

1 grassfed cross rib beef roast (~4 lbs)

1 can full fat organic coconut milk (I suggest this brand because it is BPA free) 
1/2 cup freshly squeezed lime juice
3 TBSP organic coconut oil (this is my favourite kind

1 TBSP packed lime zest
2 TBSP chopped chives
1/2 tsp black pepper
1/2 tsp sea salt 


1. Turn your slow cooker onto high heat
2. Place all the ingredients into the slow cooker
3. Cook for 6-8 hours
4. Serve and enjoy!

*** NOTE (Added February 25, 2015): I have had some questions regarding the cooking time for this recipe. Mine worked out fine cooking it on high for 8 hours, but if you are worried you could cook it on high for 4 hours and then on low for another 4 hours (I have also done it this way and haven't noticed a difference in the final product). Keep in mind that these times may be completely different if you aren't using grassfed beef.

Coconut Blueberry Paleo Oatmeal (AIP, Gluten Free, GAPS, SCD, Whole 30)

Well I am pretty excited for the recipe I am sharing with you I must admit. One of the most popular recipes on my blog is the Creamy Paleo "Oatmeal"and since I have received such great feedback on that one, I decided to make a version with blueberries. Because who doesn't love blueberries? They are one of my favourite fruits. Plus they are filled with antioxidants and vitamins and have many health benefits. Everything from better memory and eyesight to positive cardiovascular effects.
Plus they taste delicious. Which is obviously the most important thing about them.
And the combination of bananas and coconut in this grain free oatmeal really pairs well with the blueberries. In my humble opinion. Plus there is some grassfed gelatin thrown in there for a little protein. And we all know that gelatin is a superfood right? (If not you should read this post to find out why). If you aren't eating this stuff regularly I highly recommend that you do! Your body will thank you.

So if you follow me on Instagram you may have seen that I was just in Quebec City for a conference. It was the annual Canadian Rheumatology Association meeting where I was presenting a case report. I had never been to the meeting before and I was very impressed with the sessions I attended. The one big downside of the conference? The food! I am so happy I stuffed my suitcase with food before I left because I would have starved otherwise! Plus the labelling of the food was terrible. No where did they tell you if things were gluten free or not. It was slightly frustrating. So I lived off the sausages, bacon, carrot sticks, nuts, canned salmon, fruit, Epic bars and Lara bars that I brought with me. Yes friends I have learned that you have to be prepared to feed yourself when you have a "special needs diet." Whether that seems fair or not it's just fact. It's not worth getting sick from eating unsafe foods. Although it does often mean filling half my suitcase with food items. Oh well. Does anyone else do this? I am sure I'm not alone! 

In unrelated news, did you hear that The Supreme Court of Canada struck down the ban on physician assisted suicide? As a physician in Canada I am thrilled about this news. And I know most Canadians are too. I think that people absolutely have the right to choose how they are going to die when they are going through unbearable suffering. As a physician I have had to watch way too many patients suffer with intractable pain or other symptoms near the end of their lives. Many of these patients beg for their suffering to end, and up until now we have been unable to help them. The same goes for family members who care for their loved ones with palliative illnesses. I have had friends tell me how horrible it was to watch their parent or sibling beg to die because the pain they were experiencing was so horrific. I can only imagine how terrible that was to go through. 
Now I realize that things are not going to change tomorrow, and that many guidelines and rules around this decision will need to be drafted. But we are moving in the right direction. And that is what matters! I also realize that some of you reading may disagree with my opinion on this topic. And that's ok. It is a controversial issue and everyone is going to have their own opinion. I am simply expressing mine. 1 cup full fat organic coconut milk (I recommend this brand because it is BPA free)
2 ripe bananas, broken into pieces (medium-large size)
1/4 cup coconut butter or coconut manna (buy here
1 tsp organic vanilla extract (omit for AIP and Whole 30)
pinch sea salt

1 TBSP grassfed gelatin (I recommend this kind
1 cup fresh blueberries
1 1/4 to 1 1/2 cup finely shredded coconut (depends how thick you like your oatmeal)


1. Place a medium pot on the stove on medium heat
2. Add the coconut milk, bananas, coconut butter, vanilla extract and sea salt to the pot
3. Bring to a boil
4. Turn down the heat and simmer for 10 minutes, stirring every couple minutes to break up the banana pieces
5. Add the gelatin and stir well to dissolve
6. Add the blueberries and cook for another 2-3 minutes
7. Remove from heat and add the shredded coconut until it reaches your desired thickness 
8. Let sit for approximately 5 minutes to allow the coconut to soften 
9. Serve and enjoy! 

Optional additions: 
1 tsp ground cinnamon
1-2 TBSP nut or seed butter of choice 
Chopped nuts

Vegetable Packed Pork Chili (Paleo, SCD, GAPS)

Happy Monday!  I hope you had a great weekend as always!

As I am sure you know yesterday was Super Bowl Sunday. The day of good football, delicious food and amazing commercials. It always amazes me how much money companies shell out in order to pay for a Super Bowl commercial spot. $4.5 million for a 30 second advertisement this year to be exact. Crazy. Just Crazy. I guess if you are spending that much money you better make sure you are showing a good commercial. Although I guess for some of those corporations $4.5 million is just a drop in the bucket. Again, crazy. Unfortunately, being a Canadian we don't get to see most of the American commercials at the time of the game. We must rely on YouTube or other such means to catch up after everyone else has already seen them. It's tragic I know. So I am looking for suggestions. Which were your favourite commercials?

Since I am assuming most of you watched the game, were you happy that New England won? Again? And more importantly, did you like the half time show? (Yes I have priorities). To be honest I am not that much of a Katy Perry fan but I did really like her performance. And all those special effects were pretty crazy. I can only imagine how much time that took to put together. I was also very impressed by all her speedy outfit changes. I honestly don't know how that was possible. Katy Perry you do amaze me. Plus the guest appearance by Missy Elliot totally took me back to my junior high school dance days. Such good memories! Missy Elliot and TLC. Those were the good old days…

And in honour of Super Bowl style foods and potlucks I decided to put together this chili. Because nothing says football quite like a good chilli right? No? Just me? 

For me chilli is one of those all time comfort foods. I grew up eating chili on a regular basis and it's one of those foods that I actually miss since being on a paleo diet. Now you purists may say that I shouldn't be calling this chill since there are no beans involved. Well you are right, there aren't. But since beans are not allowed on the paleo diet I had to make some modifications. And I am pretty pleased with how this one turned out. It's loaded with vegetables and just the right amount of spice. Plus there is a little bit of cacao powder for a hint of sweetness. Sweet and spicy all at the same time. Oh yum!
I like topping mine with a little bit of raw mozzarella cheese. When it melts into the chill… oh man that's good! I have also added guacamole, raw parmesan cheese and nut butter and they all taste delicious. What do you add to your chili?

2 TBSP bacon fat or other fat of choice
2 lbs ground free range pork

7 medium sized tomatoes, diced (about 4 heaping cups worth)
2 TBSP minced chives or one small onion diced (many people don't tolerate onions so use which is best for you)
2 tsp hot chili powder (I used this brand) - Feel free to add more or less depending on how spicy you like things)
1 TBSP organic cacao powder - OMIT for SCD
1 tsp ground organic cumin
1 tsp organic oregano (buy here
1 tsp ground organic coriander (I used this kind
1/2 tsp sea salt
1/4 tsp ground organic allspice (I love this brand)

2 orange bell peppers, diced
2 yellow bell peppers, diced
2 cups chopped green beans (can be frozen or fresh)
1/2 cup full fat organic coconut milk (this brand is BPA free)


1. Turn your electric frying pan to 250F
2. Add the bacon fat and ground pork and cook until browned, stirring occasionally to break the meat apart
3. Add the diced tomatoes and spices and cook until the tomatoes start to break apart
4. Add the bell peppers and cook for another 5 or so minutes
5. Add the green beans and coconut milk and cook for another 10-20 minutes (until the vegetables are the texture you desire). 
6. Remove from heat, serve and enjoy!

** TIP: Did you accidentally make your chili too hot? Add a bit of lemon juice. I know it sounds crazy but it works!
